Best Bread Ever from #1 Skeptic (3 month review)

I have been using my Zo for 3 months now. I bake 2-3 loaves a week and have done some experimenting with recipes from other bread machine cookbooks. I've used the quick cycle successfully using Zo recipes which don't recommend the quick cycle by adding one or two extra tsp. of rapid yeast + 4 tsp. vital wheat gluten, and this works like a charm.

Best I've Used
This machine is the best I've used. I make vegan whole wheat bread using my own recipe and custom program and it works perfectly every time. I used this machine's custom program capability to extend the knead and rise times to get my bread to rise properly without having to use any white flour (or eggs, milk or butter). Getting totally vegan whole wheat bread to rise properly is not easy and it is a testament to how good this machine is that it can do it.

Great for gluten-free bread
First, my thanks to all the reviewers. I did a lot of research before choosing this machine, and all of the comments helped.
Tonight I am very happy. I had my first loaf of real bread in years. I am gluten-intolerant, and have had to special order alternative (and not very good) bread online. Working the hours I do, I don't have time to experiment with alternative flours, and with one disabled hand, I can't knead the dough.

WONDERFUL!
My father loves to cook. He's also completely blind. My husband and I had the inspiration that a bread machine might make a good gift for him. Why spend 200 bucks on a bread machine?!

zojirushi bread machin
I have had 3 bread machines before this one. I make nearly all the bread we eat. Wore the others out, way too quickly. Broke down and bought the best I could afford--what a difference! Love it. I usually bake bread in the oven so the loaf pan is not the most important thing to me. But the kneading with the twin blades is wonderful. I live in Fl. so i have to add flour sometiemes--much more humid here--and the machine is easy to do this with.

Great for home ground whole wheat!
About 2 years ago, I began researching bread machines and wheat grinders as I wanted to provide a healthier alternative to my family. After much research I decided on the Zo and must say we are COMPLETELY satisfied. As you may know, true whole wheat (not the stuff you buy in the store) can be very hard on bread machines. Pleased but only after making some adjustments
This is going to be long, but I hope it will help someone else who is having trouble with their Zoji.

So far I have been very happy with my Zo. I agree with others about the low baking temp...on med., my bread was much lighter than expected, but I wouldn't go so far as to say the loaf was undercooked. It was well formed and airy, just looked like I had baked it on a lower setting.

I have had 4 different bread machines, all of them had the single paddle upright loaf style. I didn't mind the bread they turned out, but I didn't like the loaf shape. My prayers have been answered! I can't quit making bread now! The loaves come out perfect, and if they don't I have come to relize that with bread it is typically the COOK's error, not the machine's.
